Cooking with Chef Michael Schwartz - NEW

Olive trees and the green Apennine Mountains surround the beautiful Umbrian estate of Caimeli. But this part of Umbria, also known as Alto Tevere Umbro, isn’t only known for its gentle, beautiful hills. The age-old farming landscape is also home to simple but refined Umbrian cuisine and ingredients.

But this part of Umbria, also known as Alto Tevere Umbro, isn’t only known for its gentle, beautiful hills. The age-old farming landscape is also home to simple but refined Umbrian cuisine and ingredients. The area is famous for its truffles, amazing olive oil, cheese, and, of course, wine.

Your accommodations for the week are located at Caimeli, a 40-acre olive plantation that includes both a 19th-century large manor house and a smaller farm house. While both have been recently restored with a high degree of comfort and elegance, the villa reflects Umbrian traditions, including exposed wooden beams and terracotta floors. Room amenities at the villa include LCD TV, hairdryers, and WiFi connection. The outdoor amenities seem endless. In addition to a stunning infinity pool, enjoy your meals underneath the outdoor pergola and explore the Umbrian hills on hiking and running trails.

About the cooking classes: Join acclaimed Chef Michael Schwartz to learn the secrets behind Umbrian cooking. The James Beard Award-winning chef currently owns and operates three restaurants, including a pizzeria, and has appeared in national publications — including the New York Times, Wall Street Journal, Food & Wine, and Travel + Leisure — as well as TV shows, including Top Chef: Season 3 as a judge. All of Chef Schwartz’s ventures strive to deliver homemade and straightforward good food with an emphasis on fresh, local ingredients. He believes in letting these ingredients speak from themselves when they hit the table. \

In the kitchen at Caimeli, Chef Schwartz will lead you on a discovery of Umbrian cuisine. You will make food from the region and Chef Schwartz’s cookbook using local vegetables, cheeses, meats, and fruits, along with Caimeli’s own olive oil.

One-time only departure.
Day 1: Sunday, April 15
Transfer from Rome airport or train station, or Cortona’s train station, between 8:00 and 11:00 a.m. Arrive at Caimeli for brunch between 1:30 and 3:30 p.m. Meet and greet, receive your aprons and week’s agenda, and get your cookbook signed by Chef Michael Schwartz. Time on your own. Perhaps relax by the pool or enjoy an afternoon siesta. Dinner at Ristorante San Giorgio and then return to the villa for digestivos.
Day 2: Monday, April 16
Following breakfast, meet the local cheesemonger at the villa and make mozzarella, pecorino and ricotta. Tasting lunch with wines from Tiburzi included at the cheese school. In the afternoon, take a yoga class, followed by some free time for siestas or lounging at the pool. At 5:00 p.m., begin your first cooking class, which will focus on creating barbecue dishes along with sides and appetizers. Enjoy the meal you’ve created during dinner outside under a pergola. Campania wines included. Digestivos to follow.
Day 3: Tuesday, April 17
Breakfast. Depart for the city of Assisi, where you go on a guided tour of the Basilica. Enjoy some free time for both shopping and lunch. Head to the medieval village of Montefalco for wine tastings at two vineyards. Stop at Ristorante Redibis for dinner. Return to the villa for digestivos.
Day 4: Wednesday, April 18
Breakfast, then take a trip to the market to pick up fresh ingredients for class and to grab a cafe. Your second class, focused on Umbrian cuisine, begins around 11:30a.m. Lunch to follow based on your efforts. Your afternoon will be spent relaxing with massages, manicures and pedicures, and siestas. In the evening, have fun at a pool party, where a Jazz band will play, and you will enjoy an Umbrian-style roast pig dinner with Tabarinni wines included. Following dinner, digestivos.
Day 5: Thursday, April 19
Following breakfast, depart for Perugia, where you will visit the National Gallery of Umbria, which houses masterpieces from the Middle Ages and Renaissance. Stop in at the chocolatier, Augusta Perusia, for a sample. Time for shopping, and lunch on your own. At 2:45 p.m., head to Deruta’s Un Museo Lungo un Secolo for an artisanal pottery class. Return to Caimeli for a home-cooked dinner with Veneto wines. Digestivos to follow.
Day 6: Friday, April 20
Breakfast. Take part in a unique wine class with a sommelier from Bastianich Winery. At the villa, enjoy a lunch of Umbrian delicacies. In the afternoon, your third cooking class, which will be followed by dinner outside. Bastianich wines included, and dinner is followed by digestivos.
Day 7: Saturday, April 21
Following breakfast, your final cooking class and lunch based on your efforts. In the afternoon, leave for Cortona for some shopping. At this time, the pots that you made in Deruta will be delivered. Bid farewell to Chef Schwartz and some free time for enjoying the pool or the siestas. Dinner in Pomerancini restaurant and then return to the villa for digestivos.
Day 8: Sunday , April 22
After brunch at 11:00 a.m to 1:00 p.m., departure transfer to Rome train or aiport.
